The difference between Broth & Stock

Are the words stock and broth interchangeable to you? For years, I thought they were the same and while they can be substituted one for the other in recipes, they are prepared differently.

According to Healthline, broth is lighter and more flavorful. It is created by simmering meat in water accompanied by vegetables and herbs.

 

 

 

Because of the delicious flavors from the meat and vegetables, many people like to drink broth plain. It is often used when people are sick because it provides protein along with vitamins and minerals. I am sure that is why my grandma would make a delicious pot of chicken soup when someone was ill. The warm, steaming broth worked great to loosen mucus and it helps to warm the whole body.

 

 

 

Broth is thinner than stock with some of its most common uses being:

  • Cream sauces
  • Dumplings
  • Casseroles
  • Gravies
  • Soups

Bone broth has become very popular in the past few years although it’s been around for forever just under the name stock. If you’ve ever heard your grandparents talk about making stock using bones, they were actually making bone broth.

 

 

 

Stock and bone broth are essentially the same thing but for the remainder of this article, we will refer to it as stock. Stock is prepared by boiling bones and cartilage in water for many hours which allows the bone marrow and collagen to be released. Stock contains slightly more fat, carbs and protein than broth but it is significantly higher in vitamins and minerals, thanks to those bones.

 

 

 

The additional nutrients, as well as collagen, marrow, amino acids and minerals, help protect and heal your digestive tract. This is very important for those with autoimmune conditions or leaky gut syndrome. Stock is the drink of choice if you are looking for the most health benefits.
